Kurma Mariami AA: Incorporating Dates into Cuisine Beyond Sweet Treats

Kurma mariami aa

Cooking with Kurma Mariami AA — not just for raya trays

Kurma Mariami AA usually shows up on a raya table straight out of the box. Fair enough — it's a good eating date on its own. But the grade also holds up well in cooking, which is where most people never try it.

Why this grade specifically

Mariami AA isn't as wet as Medjool, so it doesn't turn to mush the second it hits heat. Chop it and it stays chopped. That firmness is what makes it useful in a stew or a rice dish rather than just a snack bowl.

In savoury cooking

Drop three or four chopped dates into a lamb or chicken masak lemak in the last ten minutes — the sweetness rounds off the santan and spice without you needing extra gula. The same goes for a beef stew with cinnamon and star anise; add too early and the dates dissolve, add at the right time and they stay as small sweet pockets through the dish.

For nasi minyak or a spiced pilaf, stir in chopped Mariami AA with the fried onions and cashew right before serving. It's a small addition but it's the difference between a plain nasi minyak and one that tastes like effort went into it.

Stuffed as a starter

Pit the date, tuck in a piece of gouda or cheddar, wrap with a thin strip of beef bacon if you like, and pan-fry until the cheese softens. Serve warm. This travels well as a starter for open houses because it can be made ahead and reheated for two minutes.

Salsa or chutney for grilled meat

Blend chopped dates with tomato, onion, a bit of chili padi, and lime juice for a quick chutney that sits well next to grilled chicken or satay. It keeps in the fridge for a few days.

What to buy

Check current date prices if you're comparing grades before an order, and if you want something stickier and more concentrated for baking rather than these savoury uses, our Ajwa page is the better fit. We've also written about why cravings for dates spike during Ramadan if that's what brought you here.
